    • Creador is one of the few, if not the only clay-pot fermented mezcals in the market. It is as ancestral in process as it gets.

  • “Ancestral” refers to traditional production methods - small batches, milling by hand, natural fermentation, and clay pot distillation. Creador highlights ancestral production including milling by hand, clay pot fermentation, and clay pot distillation.

  • Clay pot distillation is an ancestral technique that can emphasize texture, minerals, earth, and delicate aromatic complexity. Creador releases are fermented and distilled in clay pots by José Alberto Pablo.

  • It means all fermentable sugars come from agave (not cane sugar or other added sugars). Creador releases are 100% agave spirits. No additives.

  • Creador releases are unaltered and sourced directly from maestro palenqueros. No pesticides. No added water. No additives of any kind.

  • Creador profiles vary by agave species and batch. You’ll experience everything from fruit-and-floral aromas (like ripe apple / stone fruit / citrus) to earthy-herbal notes (like wet grass / honey / minerals) depending on the expression. Generally, Creador is soft on the pallet (alcohol is present but not pronounced) with large bouquets and long, pleasant finishes. Try for yourself.

  • Creador expressions vary but in general are light on smoke. Creador expressions are floral, fruity, herbal, mineral, or earthy. The smokiness that you find in mezcal comes from the process of roasting the agave. Additionally, smoke level varies by agave type, fermentation method, and type of distillation. Well-made mezcal should not be overly smoky.

  • Yes—Creador releases include specific production dates and limited bottle counts (often in the tens to low hundreds).

  • An ensamble is a blend made from two (or more) agaves, usually resulting in flavor profiles distinctly unique from the source agaves. Creador ensambles are cooked, milled, fermented, and distilled together, creating an integrated spirit from start to finish.

  • Capón is the practice of cutting the quiote (flower stalk) so sugars remain in the plant longer; Creador notes capón agaves can stay in the ground additional 9+ months before harvest. Creador has Espadín Capón and Mexicano Capón.

  • Try Creador neat first to learn the profile. Some expressions, like De Calidad, Espadín, Espadín Capón, and Lumbre shine in cocktails (especially if you want a spirit-forward mezcal margarita, negroni, or Oaxaca Old Fashioned).
