Arroqueño + Tobalá Ensamble
For his ensambles, José Alberto pairs two agaves in equal proportion to highlight the character of each. Here, maguey arroqueño (14-16 years old) and maguey tobalá (8-10 years old) were harvested in San Mateo Yucutindoo to produce a special small batch, bottled at high proof.
José Alberto typically adjusts his finals product, using different cuts of the distillate to achieve an 48-49% ABV (alcohol by volume). One hundred liters of this batch were imported at the standard adjustment (48.8% ABV), and fifty liters were not adjusted and imported at 57% ABV. This high proof batch portion is available exclusively at Suerte in Austin, Texas. Additionally, approximately 18 liters of the high proof batch were put aside to rest in glass and will be released at a later date via Suerte.
Tasting notes (high proof - 57% ABV):
Nose: Big Red gum, passion fruit, strawberry cereal milk, cinnamon powdered donuts
Palate: cantaloupe, allium, tropical fruit, herbaceous, wet stone, saw dust
Finish: cedar shavings, sharp, tight
Tasting notes (standard proof - 48.8% ABV):
Nose: baby powder, honeysuckle, sea salt, strawberry jam, cinnamon
Palate: chamomile, daisies, rhubarb, root vegetables, green bell pepper, viscous
Finish: open, tart, dry

Distillation: Twice in 60-liter clay pots, locally sourced oak (encino) wood-fired
