Madre Cuish
Madre Cuishe is one of the many varieties of agave karwinskii, a species that grows tall like a tree. This lot took twelve to fourteen years to mature and was harvested semi-wild in Santa Maria Zoquitlán.
After cooking, the dense, log-like agave piñas were milled with a gas-powered wood shredder.
This is José Alberto’s first batch of Madre Cuish.
Tasting notes:
Nose: cotton candy, candied pecan, praline, dates, pink bubblegum
Palate: fruity candy, minerals, green grass, hay, wet rock
Finish: Dry, sweet

Maguey source: Cultivated semi wild in Santa Maria Zoquitlán, Oaxaca
Elevation: approximately 1248 meters
Age of maguey: 12-14 years
Cook: 4-5 days in rock-lined conical oven, using locally sourced walnut (nogal)
Milling: gas-powered wood shredder
Fermentation: (Natural 4-7 days in 90-liter clay pots (potable water added after day 1 or 2)
Distillation: Twice in 60-liter clay pots, locally sourced oak (encino) wood-fired
