Mexicano Barril
This varietal of agave rhodacantha (maguey mexicano) was cultivated in Santa Maria Zoquitlán, approximately three hours drive and 115km from San Bernardo Mixtepec. With an oblong barrel shape, it’s an agave that is much sweeter than barrel-shaped maguey from other regions, which are usually agave karwinskiis.
This small bottling is available exclusively at Mezcalería Tobalá in Austin, TX.
Tasting notes:
Nose: Plum, chardonnay, musk, black cherry, creamy dill, yogurt
Palate: glazed carrots, arugula, caramel, beets, almonds, raw spinach
Finish: long, drying, oak

Cook: 4-5 days in rock-lined conical oven, using locally sourced walnut (nogal)
Milling: By hand with mallets (mazos) in hollow tree trunk (canoa)
Fermentation: (Natural 4-7 days in 90-liter clay pots (potable water added after day 1 or 2)
Distillation: Twice in 60-liter clay pots, locally sourced oak (encino) wood-fired
