Tobasiche
Tobasiche is an agave karwinskii, a species of agave that grows tall like a tree. Slow growing, this lot matured over 12 to 14 years before being harvested in Santa Maria Zoquitlán. The dense, log-like cooked agave piñas were milled with a gas-powered wood shredder.
Tasting notes:
Nose: tropical fruit, blueberry compote, pine sap, moss, wet leaves, red roses
Palate: strawberry candy, raspberry, cream, gochujang, shortcake, clay
Finish: acorn, parsley, lamb
